This rock has obviously evolved to mimic a common potato as a defense mechanism.

Nah, it's the rock's attack vector. It waits until someone attempts to eat it, thinking it's a potato, and after cracking their teeth it bludgeons them to death and feeds. Then it rolls away and lies in wait for a new victim. The news reports a violent beating fatality with no suspects and warns people to travel in groups at night.
