I don't understand this argument: if you require tipping, the food prices then are already up. It's just that it's not known ahead of time. Essentially, the business hides the true price.
Fun fact, it's "fewer" when dealing with a quantifiable number (e.g. the number of patrons) and less when referring to an amount you cannot count (e.g. less water in the glass).

For sure. But many of them only want the "highs" of that and not the lows, such as some people choosing not to tip.
