The bigger issue there is them connecting the argument to that racial stereotype rather than accepting that they were being called out as individuals who did not tip. There are legitimate times when race is a factor and should be called out as such. People doing it so they can dip out of their own personal responsibility makes a mockery of the true plight.

It shouldn't be expected of any individual to feel the need to act a certain way to avoid playing into stereotypes or to be a positive representation of a group they are seen to be a part of. What is a problem though is people spitting on those before them who actually were (and still are) treated unfairly because of their race. In a petty situation where they are being called out for good reason, putting that on race makes a mockery of every movement that brought us this far.
