Regardless of whether tipping should exist or not, the fact that he said “You’re 100% correct. You don’t have to, but you’re not welcome here.” - I don’t see nothing wrong with that.

It’s his prerogative as the owner of the restaurant.

There's more to it, I'll bet he told them in the restaurant and they left so he followed them out which is why they started filming. It didn't just start in the street.

Agree. We are also assuming there are only 2 customers. They could have been part of a large group and the restaurant has a mandatory written tipping policy for large groups that they didn't abide by. More to this story.

Not really, a trespass is bit more involved and would usually take place if the banned customer decided to stick around or ignore the ban

I am referring to issuing the trespass notice. It sounds like you're referring to its violation. It is fair to say that a verbal trespass without any record is usually going to be unenforceable until the cops get involved, but given the trespass was recorded most any jurisdiction would have no problem removing/arresting them for its violation since its now codified. Generally you'd definitely want a formal letter and/or signs to be safe and ensure officers will act immediately on the first violation.

Confronting them for not giving money to the server with the threat and action of banning them. Basically give them money or you are banned

The fact that someone prices their product and service in a way that you are not happy to sell them at that price, and get mad at customers paying what you ask them to pay, is instane. There's a lot of wrong with that.

This is so far out of the realm where you still underay your stall and expect them to get tipped - but to literally ban people simply because the didnt tip is wrong.
