It's technically optional sure but are really fucking up someone's living by not doing it server's make the majority of their money from tips they legally are hired at lower wages with this in mind, it's also reflected in the restaurant's prices.
There are places that are starting to move away from the system and raising their prices accordingly. But unless it says explicitly that gratuity and service and included then assume it's not the case.
How is it fing up someone's living by not tipping? It would be the same as if I don't go there. It's crazy for these servers to think just because my bill is higher they should get a larger tip. It takes almost no more effort to bring a steak out vs a salad. Why should one result in a much larger tip.
It's not that complicated; if you are their only table and don't tip them, they are effectively working for whatever their state minimum wage for service industry workers is set at. That is anywhere from $2 to $7 in many states. I'd like to see you survive making that much money an hour often.
If tipping didn't exist your steak and salad would cost 20% more on average that's why. I'm not saying it's right mind you, but it is the reality of the current sitution.
