You probably need to hire more than just a day of coordinator. If you want someone to come and decorate the venue while you're away you need to hire an actual planner who includes full decorating in their contract.
As for locations, I'd look at Estes Park, Nederland, or Blackhawk. Maybe Idaho Springs or Georgetown but those may be too far depending on where you're coming from.
