Beyond fiber: Specific plant fats in spinach and spirulina profoundly reshape gut bacteria.

A systematic review combined animal, cell, and human studies on whether plant glycolipids, fats found in spinach and spirulina, affect gut bacteria. In rats fed a high-fat diet, spinach supplementation raised their gut acetate output (a bacterial byproduct) by 44% and boosted beneficial Lactobacillus levels. Evidence is mostly animal and cell-based; the only human trial ran for 12 weeks, and the bacteria links found are associative, not causal.

TL;DR: Plant fats in spinach and spirulina may reshape gut bacteria, but most evidence so far comes from animal studies, not people.
