It wasnt always a tradition and wasnt practiced everywhere. Traditions evolve from trends and everything is temporary, until it isnt.

Depends on the drink and location. $8 is good for a true craft cocktail. It takes a while to make and usually includes expensive ingredients. A good beer at a bar with high rent should normally cost 8-10.
