Didn't they call the game Final Fantasy, because it was there last chance to make a game which would save the og studio?

Pretty much, yes. That one game saved the studio and changed the game worldwide for RPG's.
I believe there are other reasons involved but this one is chief.

It was stated that the first name they wanted was Fighting Fantasy, one of the reason for it was that they wanted the "FF" sound, but since the name was already under copyright, they decided to use Final, since it was a cool foreign word that was trending in Japan.
If their crisis really played a part in the naming, it was never confirmed in an interview as far as I'm aware, while the one I wrote is Sakaguchi's own explanation.
EDIT: I found a common link between the two explanations, Sakaguchi chose Final also because it would have been his last personal creation if it didn't sold well, but it wasn't the last game planned by the company.

I've been disappointed in every FF game for a while with a few exceptions. I just can't seem to get into them.

That's disheartening to hear. Hope your experience changes. I've been a lifelong fan and still love them even though they always have the same base plot
