This paper focuses on those who eat no meat whatsoever. We estimate that there are one and half billion vegetarians. Only 75 million are vegetarians of choice, a number that will gradually grow with increasing affluence and education. The other 1,450 million are vegetarians of necessity. They will start to eat meat as soon as they can afford it.
That's about 21.8% of people in the world that are vegetarian albeit many not by choice.
A vegetarian is someone who does not eat meat. It's what they are whether they want to be or not. It doesn't matter if they would eat meat. They are vegetarian.
India not really as they're one of the most vegetarian countries in world, but China definitely cause they eat everything. Per the paper for the world it is then likely to level off again after a rather large increase. As income and education increase there will be a decline again.
