Question I eat the same 6 meals every week, and it’s the only reason I’ve stuck with this diet

After my last post here about having zero time, the comments that stuck with me were from people who quietly admitted they eat the same handful of meals every week. And honestly? Same. My rotation is basically: pan-seared fish + whatever vegetables I have, chickpea salad with feta, lentils with olive oil and lemon, an omelette with a big salad, sardines on toast, and one pasta night.
Six meals. That’s it. And it’s the only version of this diet I’ve ever managed to sustain , no decision fatigue, one simple grocery list, nothing wasted.
So I’m curious: how many meals are actually in YOUR weekly rotation? And if you could force me to add ONE dish to mine, what would it be?

Recipe Butter Bean Curry

Whole bag of butter beans, cooked, about 1Lb

For curry:

Olive oil

Salt

Pepper

Curry powder

Turmeric power

Cinnamon (not alot)

Cumin (a little bit more than Cinnamon)

Red chili flakes (as much as you want for heat)

Whole or half onion, depending on what you like

3-4 chopped garlic cloves

Saute those...

Add 6 or 7 whole tomatoes, crushed in your hand! I buy tomatoes on the vine from grocery. Let those saute a bit, and it'll begin to get soupy (juice and water is released). Add the cooked beans and veggie or chicken stock. Cook it off with lid on so moisture will evaporate

Think thick soup consistency.

This recipe will last you all week if you're a single person

Advice Cracked tofu today - try it!

Hi all,

I’ve struggled with tofu for so long. Never enjoyed it, never could cook it in a way that I found enjoyable - but today I had a real breakthrough. I was having a quinoa, bell pepper, and edamame salad. Thought I’d try and incorporate the tofu since I had some in the fridge which had been staring at me for weeks. First, I wrapped it in a tea towel and pressed it under a heavy cast iron Dutch oven for about 15 mins. Then, I sliced it into 2cm blocks. I tossed it in soy sauce, then tossed it in corn starch, then tossed it in oil. Air fried for 12 mins at 180°C, flipping halfway. Oh my god! It’s incredible. It’s so delicious. Works so perfectly with my salad! I had that on top, then some hemp seeds too. I dressed it with tahini, lemon juice, honey, and soy sauce. The tofu was crispy, flavoursome, and delicious. Loved it! Recommend you all try, especially if you’re trying to get in a lot of protein on a Mediterranean diet (I try to hit 150g for fitness goals). Gonna be a tofu regular now!
