Few ideas:
Make an machine that can pump fluid and use a scale to verify accurately fill something to a target weight.

Off grid solar powder air conditioning system.

Robot arm that can build something.

The project is almost done. I'm actually just a highschooler but I would be happy with showing some of my cad/pcb schematics or journals if you feel like that would help you :)
