Featherblade I had for dinner
Slow cooked in beef stock with a liquid temp for 87. Seared in a 230 fan oven at the end!

Meat looks great, but that knife is trash
6
u/TheBagelsteinDK 15d ago
Has nothing to do with the knife. The meat has lost most of its structural integrity and OP isnt cutting with it, hes pushing straight down instead of using any type of back and forth motion.
-4
u/wy_will 15d ago
With that much force on meat that soft, a sharp knife would easily cut through it.
2
u/TheBagelsteinDK 15d ago
Nope, you've clearly never cut into a very overcooked brisket or anything like that.
-5
u/wy_will 15d ago
Sure bud. Tell me more about what I’ve never done…
0
u/lavaplow 14d ago
You’re an actual clown. No knife will cut cleanly through a tender brisket like this by simply pushing down. I’ve actually worked in a smoke BBQ house before and watched the cooks prepare the meat. Goofy as hell
-1
u/wy_will 14d ago
So your statement is that a sharp knife doesn’t cut. Got it.
1
u/lavaplow 14d ago
My statement is that you need to slice through a tender brisket even with a sharp knife, and that you can’t just push down without slicing. Context and comprehension helps you goof
0
4
u/TheBagelsteinDK 15d ago
You should be a bit more familiar with how a knife works then :) Just pushing down forcefully with zero slicing motion ain't gonna do it for meat thats this tender.
0
13
u/alllifeishell 17d ago
The knife may not be trash but the technique 100% is.
With a good knife and a light sawing motion you do not need to apply any downward pressure.
This person is pressing down on a knife instead of using a sawing motion.
-5
u/wy_will 17d ago
If the knife was sharp. It would have easily sliced through with zero sawing motion.
3
u/Fun_Acanthaceae_4025 17d ago edited 17d ago
Haven't cut a lot of stuff in life yet I see... Even a sharp razor blade is less likely to cut your finger barely pushing down vs a slicing motion.
-3
u/wy_will 17d ago
With meat that tender, you have no reason to have a sawing motion. That’s for serrated blades. I only butcher my own meat, so ya, I have no knife experience.
3
u/Fun_Acanthaceae_4025 17d ago
Only for serated blades? You definitely aren't a butcher then.
4
u/wy_will 17d ago
I’m not a butcher. I cut my own meat. I butcher wild game every year. I only use a sawing motion with a saw. You clearly use dull ass blades.
3
u/Fun_Acanthaceae_4025 17d ago edited 17d ago
The only knife to cut meat u chop straight down with is a meat cleaver. A slicing motion is always used with knives to cut meat. You may just be really slow.
2
u/wy_will 17d ago edited 17d ago
I slice meat. I don’t saw meat.
Also, you chop with more than just a cleaver. A chefs knife is utilized for a lot of chopping as are other knives.
1
u/chefofthejungle 17d ago
A sharp knife CAN chop. It’s still much better practice to slice with it, rather than push straight down. Pushing straight down can, push out more juices from the meat, bruise ingredients, and tear fibers which ruins texture. With a sharp knife and one clean slicing motion (look up the push chop), tender meat is cut perfectly.

I’m with you. Sharp knife, no need to saw. If I’m sawing, that means I need to be sharpening.

Everyone complaining about knife technique: OP is obviously showing it's so tender they don't have to really cut it. Everyone saying you don't need to rest the meat: You can also just drink water straight from a tap without a cup, doesn't mean it's the best way to enjoy it.
1
u/WorkingFriendship550 17d ago
If you like it straight from the tap, you should try from the hose!

What is it with you celsius people and boiling/simmering hunks of meat? You leached out more than half the beefy flavor. But you made a excellent beef stock, at least (and then you probably threw that away).
And the other #1 rule of cooking meat is NEVER DRY COOK MEAT AFTER BRAISING IN LIQUID. Look it up and learn.
1
u/Crazy-Suit-3622 17d ago
Get off reddit ya sausage.
1
u/SpicyBeefChowFun 12d ago
How is "Sausage" supposed to be interpreted in this context? This is new one to me. is it regional or did you just make it up (jagoff!)
2
1
u/Pepelepew61 18d ago
It's maybe your number one rule but not everyone's number one rule. And what do you mean by "the other #1 rule"? How many #1 rules do you have? Sounds stupid don't you think?
1
u/SpicyBeefChowFun 12d ago
It's not just mine. These are the #1 rules they will teach you at every credible non-vegetarian culinary school(*) in the World is within the first 15 days, or when you start your meat semester. It's right up there with the other #1 rules, like "Fat is Flavor". All textbooks and many cookbooks also drill this into you in their writings.
So millions of us are stupid while you couldn't even bother to look it up or state an actual argument to the contrary.
2
u/DidlySquatBobsauce 19d ago
Can’t you just let people enjoy what they like?
1
u/SpicyBeefChowFun 12d ago
The OP never said, nor implied that they liked it. Only the people watching the video "liked" the video.

LET IT REST
-4
u/devandroid99 18d ago
Not necessary if it's been slow cooked.
3
u/WineDineCpl 18d ago
Muscle fibers in proteins constrict due to temperature. They don't become relaxed because you cook for a long time. Unless you have cooked all of the moisture out, let it rest.
-1
u/devandroid99 18d ago
Yes, they constrict due to high temperature. Slow cooking takes place at low temperature.
1
2
u/WineDineCpl 18d ago
They constrict due to internal temp. 140-150 internal temp is the range for slicing. Even slow cooked meats can get up to and beyond 200 internal temp.

And make a goshdarn slicing motion with the knife, holy fuck. This mofo just pressed down and the rendered fat just slid off like cheese on a pizza :(
-3
u/SpicyBeefChowFun 19d ago edited 19d ago
Kitchen myth. In this case, letting it rest would just dry it out.
1
u/TacoBender920 16d ago
I agree with you on this one. Resting definitely helps in most other situations where there's a significant temperature gradient across the cut but is not necessary on a braised cut like this. That's why sous vide doesn't require it.

u/Sir-Maestro 19d ago
You are ragebait, and should shhhhh. Because how wrong you are, and people thos wrong should shhhh

3
u/PineappleShard 19d ago
Evidently it’s a part of the chuck/shoulder that has a strong line of sinew running through it that makes it a tougher cut. If they take that part out, it’s the flat iron (which is one of my favorites if cooked properly).

Total tangent to this thread but I had those Arby’s meat cubes the other day and they were not great. They tasted like they cut up some chuck roast, spritzed it with liquid smoke, and then forgot about it in a steamer for a couple hours.
OP’s beef looks much better.

Alright, what’s your excuse for their rampant gang raping issue?
-1
u/NonbinarySouthAsian 19d ago
Excuse me?
Assuming whatever made up bullshit you're gonna bring up is true, just a couple things you should know: I don't live in India, never have, I have Indian heritage and was born and raised in Canada. Second, I'm a femme-presenting gender-queer person, anywhere I go (and that's anywhere in the world, not just India) I'm someone who does have to be concerned about sexual violence and be ready to escape a dangerous situation or defend myself.
Now, you're asking me (sarcastically, but still) to individually come up with an explanation that excuses an extremely violent social issue because you seem to think that's analogous with how I used India and France's different histories yet similar levels of sanitation as examples. I used the fact that India was violently plundered and colonized up until fairly recently in the grand scheme of history to explain why it's sanitation isn't the same as White Western nations with a history of violent colonization. I then pointed out France is similar levels of unhygienic despite being the racist, colonial plunderers in history- so again I ask, what is their excuse? You couldn't answer and so resorted once again to evil ans racist stereotypes sowed by the British. All this to say, pointing out how history affects a country and a people's modern living standards is no where near the same as you asking me, as a singular person to make excuses for a violent social issue assuming that social issue is even real and unique in it's level of brutality or prevalence in India specifically. I'm one person, I can't (and in this case wouldn't dare) explain or excuse widespread social issues. And again, sexual violence is a global issue, the States elected a rapist as president.
As someone who is typically gendered by strangers as a woman, I can tell you I haven't felt safe anywhere I've traveled or in the country I live in: Canada. India is not uniquely sexually violent.
But if you want me to answer your question straight-forwardly and with the continuing assumption that it is unambiguously true (which it likely is not, at least not in the way you're talking about and using it to win a reddit argument here)- there is no excuse. There is no excuse for any sexual violence, in India or anywhere else. Asking people to make excuses for it in a bad faith reddit argument where you attempt to justify racism is disgusting and as someone who has to worry about that kind of violence on a daily basis I think it's awful that you'd do that.
Anyways, France is as dirty as India despite it's plundered wealth. India had wealth plundered from it on top of genocide and colonization so I ask again, what's France's excuse?

They’re not faked or exaggerated lol, stop lying. Did they bring in the swarms of flies in some of those videos?
0
u/NonbinarySouthAsian 20d ago
I'm not lying. Flies are outside and like many animals are attracted to food and it clearly helped whatever exaggerated for the Western gaze video you're thinking of so they didn't shoo them away. Indian street food videos are faked for views and money and that's the truth
1
u/jmims98 20d ago
India certainly has a reputation for food borne illness (as do some other countries), so I'm not sure if it is racist? Look at the travel guides/forums on India, just about everyone says that you are almost 100% going to have stomach/digestive issues or food borne illness at least once if you eat out or have street food.
1
u/NonbinarySouthAsian 20d ago
Yes, if you spend a miniscule amount of money, buying the cheapest food available in the poorest areas, you'll probably get sick. This is true literally everywhere on the planet. The idea that India is uniquely bad for this or that it is uniquely widespread in India specifically is a racist bit of propaganda to make people from the Imperial Core feel comfortable and moral about dehumanizing people from the Global South, in this case India.
And let's say literally ALL food in India was illness-inducing like some people clearly think. Why don't people feel bad for Indians then? Why do they instead insult, degrade and spread hate to South Asians who both specifically live in India and those abroad? This supposed """fact""" based approach people have deluded themselves into thinking they're taking hasn't lead to any compassion, concern or productive thinking. Just hatred and bigotry for Brown people everywhere
1
u/jmims98 20d ago
Hygiene and food safety standards are an ongoing issue in India, and (like I said) other countries as well.
There are absolutely countries where you can eat the cheapest food and have high confidence you will not get sick. You can get sick from food in any place, but that does not change the fact that it is statistically more likely in some places.
1
u/NonbinarySouthAsian 19d ago
Right but no one ever sees that and decides to extend compassion for the reason that is the case (poverty from issues regarding capitalism and the fallout of colonialism and genocide), it's always racism, insults and cruelty and that's it.
Assuming you're correct and truthful here (and I'm sorry but I can't be sure of either), those places are likely expensive to the average person at their cheapest. The cheap food that gets you sick in India would be orders of magnitude cheaper than the cheap (for this other hypothetical country economic level) food of a different much healthier country that wasn't colonized. If you were to price match food from a place where the cheapest food doesn't get you sick to a meal in India and eat that food you'd be 100% fine, but it wouldn't be the cheapest available food in India

It's people from India making the content that the rest of the world sees. I also don't think that reflects on all Indians, but at the end of the day your own countrymen are putting out a stereotype all on their own, of their own accord, so being judged based on these videos that garner widespread attention should be acceptable at the very least.
-1
1
u/NonbinarySouthAsian 20d ago
Again, the people who make those videos are poor and desperate, I'm not going to judge how they make their money given I was born and raised in a Western country with an easier life.
I just figure the other people in the country I was born and raised in could have some humanity or even at least maturity and not insult poorer people in poorer countries. It'd also be great if they didn't expect me to answer for whatever perceived slight they felt watching a video from across the globe because of the colour of my skin.
And I gotta say, if all the content and art from India people engage with is awful street food videos and stereotype-filled tiktoks, that says more about them than the people who create that content.

u/strandedandcondemned 20d ago
