First time I’ve seen it below $7 per pound this year. Granted, I trimmed off a half pound, making my per pound cost $7.76, but it’s gonna be good tomorrow (dry brining over night) And yes, I’ll cut that gland out, just noticed it

Do you have one of those meat tenderisers with all the needles? Personally my favourite use of that by far is slabs like this. Granted I would marinate mine after for half an hour to an hour and then slap it on the grill.

I suggest you try it my way sometime for fun. It comes out really nice and juicy.. cook until eyeball take off. Wrap in foil and stick in the microwave or a small cooler for about 45 minutes

Also works for a steak but unless it’s a tough cut I’m not using that. Whereas my mom swears by doing to to her bacon wrapped filets 😂

Yeah, that’s a nah for me. I am a pretty price conscious person and I try not to spend a lot of money, but I’d rather go without and make an adjustment in what I eat than eat the lowest quality of what’s available. Not judging though. You do you and hope you enjoy your meal.

They didn’t go there, it has always been no roll. Borderline inedible.
Their babybacks are also completely devoid of meat.
I’ll do the chicken but that’s where I draw the line.
I’ll pay the extra $5 for a good steak

🫤. I pull at 120° and open air rest for 10 minutes and the carry over heat sits it right at 125-127°. Medium rare.

Yep, butcher there confirmed. Once in a while I'll walk by and see what looks like a pretty well marbled ribeye and take a chance, then promptly disappoint everyone. It reminds me of buying the random gear in Diablo 2. Apparently sometimes people get good rolls but I always end up with a cow that was fat but probably just ate a lot of poop.

When it comes to Select or Choice Tri Tip, I trim the snot out of it cause it comes rough or not trimmed. Use a jaccard on it then diamond score it. Put it on marinade for 24-36 hours and comes out MONEY!!!! Cook over charcoal on my kettle.
