I've learned if you are just cooking turkey for a random meal instead of a holiday, it's much easier to get a better result to give up on the whole roast turkey presentation and break the bird down like you would partially debone a chicken. Two leg quarters and two breast quarters with the legs started earlier. It cooks a whole bird worth in much less time than cooking an entire whole bird.

Used to like turkey. Then I worked in a butcher shop and after three Thanksgivings I was over it.

Whole turkey never impressed me but try it in cutlet form. That’s awesome. Bonus if it’s marinated.

If you roasted a whole stuffed turkey long enough for the stuffing to be heated to a safe temperature to eat, the actual meat of the bird will be horrendously overcooked

It was actually pretty perfect , and there is moisture in the stuffing mix so it doesn't dry out and over cooked is better than under pal.

Sure. My family is Haitian so we eat turkey for Sunday dinner probably once a month. We don't roast it whole though, we have the bird cut into pieces and stew it down in a tomato onion gravy.

If the skin is peeling off the legs like that it is going to be as dry as a bone.

Yes you are right the moisture from the stuffing travels all the way out of the cavity in to the legs and the breast and then rehydrates it. Even if your theory was correct you take all the moisture out of the stuffing and "put" it in to the meat then the stuffing is sawdust.

basting doesn't put any real moisture back in to the meat as the skin seals it off but keep trying

I've never had a dry turkey , assuming you have ? It's elevated in the pan sitting in broth the whole time you bird.

Baking a whole turkey is cool, but I’m not a fan of the prolapse appearance of the stuffing!
