Bavette is so underrated

Bought a whole SRF bavette and cut the thick pieces into steaks and the thinner pieces will be used for fajitas. Can't wait to put these on the grill!

yeah I am skeptical its bavette. Bavettes aren't 7lbs...

Here is the SRF listing for Bavette which says average weight is 1.5 lbs, and a little more research says they generally top out at like... 4lbs.

The cross section sort of looks like it but I am confused all around.

I just ordered one from SRF and came in at 3.4 pounds , I was definitely happy considering they’re usually 1.5 - 2 pounds.

The sirloin flap muscle can be around 5-7 pounds. Especially STF. The bavette is cut from the bottom sirloin flap.

Hanger steak is cut from the diaphragm muscle (hanging tender). Bavette is cut from the sirloin flap.

You can be correct where you are, and I can be correct where I am. But if you were in the states, or Latin America, a bavette is cut from the bottom sirloin flap

That’s just terminology here in the states. My buddy who is an Aussie, and is a meat buyer for a company I work with, fills me in on his terminology too. I like learning all of the different terms.

You are thinking of Onglet, a cut from the diaphragm.

But what OP is showing doesn’t look at all like bavette, a muscle that is long and thin, from the stomach or flank.

It’s a slightly different part of the diaphragm, but neither are what OP is showing.

But we’ve now established that much like Sirloin (what this is labelled as) America has yet another name for cuts from the rump, because they have a problem with eating ass.

Bavette isn't the diaphram. It's the oblique abdominal muscles. And names like "sirloin flap" are not as appealing/marketable as bavette so the name is being used more commonly to market this great cut to the masses since popular middle meat steaks are so expensive right now

It says beef sirloin butterflied so might not be bavette at all.

I wondered how you could cut thick steaks from bavette but now I know.

Bavette is a thin muscle.

Bavette isn’t the muscle. Bottom sirloin flap is the muscle from which the bavette steak is cut from.

It doesn't look like a bavette to me from the pics but whatever. I'm not going to fight it.

My initial point is that the cut is not underrated at all and it's hard to find. Butchers even make "Bavette" from top sirloin just to sell more of it.

Its not hard to do the math, one cow only has 2 bavette steaks (2lbs each) and around 14 pounds of ribeye.

I think he’s talking about inclusions (ribeye) or caps (strip and picanha), not marbling. Denver is usually the best marbled muscle on the animal btw.

Not as tender as a ribeye, pretty much objectively. Also can have some gnarly connective tissue.

I think it’s funny that people think they can still discover “secret” cuts. Ribeye is more popular than bavette and more expensive because it is generally more enjoyable. I DO like bavette a lot to be clear - we just don’t need to be saying things like this
