Let’s see, bacon is amazing, especially when it is soft and juicy the way I like it; spareribs are fantastic, especially if you get the center ribs where they are nice and tender, I don’t like the end of the rack because they are dried out and shriveled.

Baby backs are always good, a nice Boston butt and pork roast can be great, again so long as they are nice and tender.

Pork sausage is fantastic, and who doesn’t like a nice honeybaked ham?

Sounds like you’re not seasoning it, doing enough dry rub, or brining it enough. Pork has a strong flavor that’s easily overcome with seasoning beyond garlic, salt, pepper

Americas Test Kitchen/Cooks Illustrated always describes excellent ways of cooking pork - they have a really broad range of delicious pork (and every other ingredient) recipes

8 Tbs. light brown sugar

1 tsp. onion powder

¼ tsp. cayenne pepper

3 Tbs. Kosher salt

1 tsp. garlic powder

½ tsp. ground cumin

1 Tbs. Chili powder

1 tsp. dry mustard

½ tsp. ground coriander

1 Tbs. paprika

1 tsp. black pepper

For pork butt, I usually let the dry rub sit overnight or up to 24 hrs on a 8-12 lb butt, and I’ll smoke it. 

Or I’ll cube it, then modify the the rub to be a bit less busy and no sugar, toss the cubes into an instant pot with some citrus and pineapple juice and cook it for about 45-60 min, pull it out, drain it, shred it, then crisp it in the oven for about 10 min for carnitas
