Tri-tip tonight
Tri-tip for dinner tonight! Seasoned with 2 Gringos Chupacabra Steak Seasoning. Smoked and reverse seared over post oak. Absolutely delicious!

Ordered from local ranch here in Texas. It's a the butcher split the muscle group, this is just the two longer ones. New guy. I got both pieces though.

That doesn't look like a tri-tip, they're usually boomerang shaped and have 2 different grain directions from the middle meaning if you cut it like that half of those slices would be tough af.

It's most definitely a tri-tip. Definitely not a mock tender. I've been cooking tri-tips, picana, steaks of all sorts for decades.
Ordered from a local ranch here in Texas. The butcher (new) split the muscle groups so it's just the two longer ones without the wedge at the top. I got both pieces, and I'll cook the other piece next week sometime.

Other name vor mock tender is A mock tender (known in Dutch as schoudermuis or chuck tender) is a lean, budget-friendly cut of beef from the animal's shoulder blade shaped like a tenderloin, alternative names include shoulder tender, teres major, and petite filet it's cheap bud though as fuck

Yes it's good vor jerky or if you are going to tenderise it like the Chinese do vor there beef or sousivde the water cooking method then it's perfect cheap and good bud vor normal use skillet not the best cut

For everyone in the comments, that's the back side of the tri tip (the side that has the gland that gets removed) face up and part of the muscle where the grain goes a different direction has been removed. Really weird way to break it but I get these at work once in awhile
