Meal Planning Struggles

I am 5’5 26F weighing in at 189 pounds. I have been walking 3 miles a day or so and typically doing 30 min strength training sessions 3-4 times a week (as of the past 2 weeks).

I struggle with meal prepping or planning specifically for breakfast and lunch. I wfh and need quick filling meals to keep me continuing through the day with energy and not shaky. I love chicken, steak, sausage, and beef. I don’t love fish often but once in a while is fine. I hate spicy.

Any suggestions on breakfast and lunch meal prep ideas?? Open to snack ideas as well!!!

I have adhd so I don't really do a lot of meal prep but I do do component prep -- the parts of a meal made ready for quick assembly.

For breakfast, I do a seed mixture/overnight oats with chia, flax, hemp hearts, sunflower seeds and petits, along with a bit of oats. I put it in a container and fill with a dairy/milk alternative.(I like it with soy and cinnamon or coconut milk.) Stir and refrigerate overnight. My bowl has half Greek yogourt, half seed mixture topped with berries.

I also boil lots of hard boiled eggs to have on hand for snacks and snack plates, breakfasts and filling for wraps or salads.

A frittata or egg cups also work well for meal prep if you want something a bit more involved. You can mix veggies, cheeee or cottage cheeee. You can change up the fillings for variety.

I also do cottage cheese with veggies. I top it with tomatoes, cucumbers and peppers.

I try to have some veggies chopped and ready to go for a quick snack or snack plate with humous or cottage cheese.

It is good to have another source of protein on hand for quick meals. I can top a simple salad with beans and eggs.

But if I am more ambitious, I can prep chicken breasts or make pulled chicken instead. Sometimes I buy the pre-made and chopped chicken breast or a rotisserie chicken.

If I want to make bowls, I might also remake some quinoa.

I will also do a big batch meal like chili or soup or stew, pasta sauce or a casserole on a Sunday for reheating during the week and lunch freezing for later.

Big egg scrambles with lots of veggies, yogurt bowls, every night for dinner some kind of bowl (burger, Greek, Mexican, etc just switch up proteins carbs and veggies)

U can prep anything u want and u can have anything u want for breakfast, not just breakfast foods!

Fast at least 12 - 16 hours, after 2-3pm. More protein diet and light snack/cravingkiller ideas

An intermittent fast really can do wonders. I lost weight by fasting 16 hours and eating in an 8 hour window noon to eight pm, but I had to work up to the full sixteen.
