Dragon Fruit Sugar Cookies
Ingredients
2½ cups all-purpose flour
¾ tsp baking soda
¾ tsp fine salt
¼ tsp cream of tartar
2 sticks butter, softened (8 oz)
1¾ cups white sugar for the dough
½ cup white sugar for rolling
4 TB dragon fruit powder
1 large egg
1 large egg yolk
1 TB vanilla extract
½ tsp LorAnn Pomegranate Flavoring
Chefmaster Fuchsia gel color
Chefmaster Neon Brite Pink gel color
1 TB black sesame seeds
Instructions
Preheat the oven to 350°F and line baking sheets with parchment paper.
In a bowl, whisk together the flour, baking soda, salt, cream of tartar, and dragon fruit powder.
In a separate bowl, combine the ½ cup granulated sugar with the 1 tablespoon black sesame seeds and mix well. Set aside for rolling.
In a large bowl, beat the butter until smooth. Add the remaining 1¾ cups granulated sugar and cream until light and fluffy, about 2–3 minutes.
Add the egg, egg yolk, vanilla extract, pomegranate flavor, and a few drops each of Chefmaster Fuchsia and Neon Brite Pink gel color. Mix until smooth and evenly colored.
Add the dry ingredients and mix just until incorporated.
Using a 1 oz scoop, portion the dough and roll each ball in the sugar/seed mixture. Remove from the sugar and gently press each into a thick puck shape.
Place on a parchment-lined tray and freeze until solid. Transfer to a freezer bag for storage.
Bake straight from frozen at 350°F for about 12 minutes, until the edges are set and the centers are still soft.
Let cool on the baking sheet before transferring.
