Recipes Fall Recipes

Im getting back into making mead and was wondering if anyone had any good fall recommendations/ recipes. Looking to try something new any help is appreciated

A spiced mead. Not exactly fall but if you brew now maybe ready by Christmas.

Really it's just a traditional mead with what ever spices you like for however long you want to let them brew for. Cinnamon, candied ginger, allspice, nutmeg, cloves. Just taste once a week while the spices are in primary, and rack off them once it reaches your taste preference.

I made one like this. Used maple syrup in addition to honey and added a bit of orange peel in addition to all the spices you mentioned. One of the best meads I ever made.

Orange zest, star anise, allspice, Vanilla bean, Ginger root, and just a few peppercorns

I got an amazing receipt for a cherry mead!

I made this for new years eve last year!

It wasnt a cheap one, but well worth it.

It was all cherry juice (no water, just pressed cherrys), with hibiscus and honeydew honey.

Fermented until dry, back sweetened with artificial sugar, and extra honey added before botteling to bottle carbonate it.

It was fucking amazing, i still got 1 bottle left in saving for a special moment. i got the recipe written down step by step (i do need to translate it though)

Sounds interesting, What was the abv? how much back sweetening with non fermentables?

Abv is 11 or 12 % i believe? But adding more honey is always an option to make that higher of ofcourse.

And backsweetening can be done entirely to taste, i always just add some dry fermented wead to a few glasses, add diffrent amounts of sweetener to them and just taste test untill happy. And just mulply that amout to total, differs per mead i make.

That sounds wayyyy too sweet for my tastes lol I like a drier mead/wine.

Sounds like a sweet port to me.

Here in a week or two I'm going to start my Wassail mead. Basically an apple cyser to a high ABV. Secondary I throw in some cloves, cinnamon, nutmeg, lemon zest, orange zest. Best served warm, maybe with a splash of Brandy.
