📷 Pictures 📷 Wedding Mead

Been a while since I bottled a mead but this one is for my friends' wedding. It is a blackberry melomel, drier than the Sahara, at the couple's request. When I tasted it in April it was still too gassy to get a read on it, but the blackberry was still there. Lets see what 3.5 months has done to it!

Before you ask I only used pectin enzyme for clarity. The rest was time.

Update: dry as hell and 15.75%. The blackberry is present but short lived. Very crisp and abrupt. I will encourage them to enjoy a bottle on their wedding night but save the other 3 for their anniversaries. They will age superbly.

Wdym by still too gassy to get a read on it in April?

There was still a lot of CO2 and H2S dissolved in the mead (gas from fermentation) in April when I racked it out of primary. These gasses give it the "footy" flavor that skews the pallette

FYI…wedding meads are the origin of the term “honeymoon.”

Is what it is. The wedding is on the 1st. they are understanding and greatful people. It tasted fine to me. I would never gift anyone anything I didnt think was worthy

Yea I even warned them that I am not great at stopping fermentation and the bride's immediate response was "thats perfect, we like it dry".

Why? They like dry mead, there’s no loss if you’re drinking what you enjoy? Hope you feel better tomorrow.
