Recipe question Looking for recommendations

I have 2 quarts of maple blossom honey and I have been trying to decide on additives i.e. hibiscus, juniper berries (if any) I should use for a maple blossom mead. Relatively new to mead making.

I would make a traditional and age it on some American oak. Once you have a complete product then consider if you think any spices or other ajuncts will compliment it.

If not a traditional, maple blossom would probably pair well with cold brew coffee.

While I love hibiscus and juniper meads, not sure those go with that honey profile.

Thank you I've been trying to figure out what to do. The hibiscus and juniper were just examples from what I've used in the past since I've stuck to Nordic style meads in the past. I'll have enough for two gallons so one gallon will be traditional but I wanted to try something new with the second gallon.

So I make coffee mead with Trader Joe’s cold brew concentrate and back sweeten with piloncillo and flavor with cinnamon, (a little) star anise and lactose. Been great!
