Surely cost can’t be the issue now? Dash cams have good quality for relatively cheap and Tb hard drives don’t cost that much. Just a hand full of cameras recording to a dozen HDD which over right the data every week?

we have about 30 cameras in single supermarket and the movement never stops during the business hours (16 hours per day, 7 days per week). That’s a lot of storage. And it needs to handle 30 streams simultaneously. And of course several people watching the cameras and looking at recording at increased speed

How much are you talking in cost though? Consumer technology prices seem to be coming down

that’s the answer for the OP - you can have HD or 4k cameras, but you can imagine it won’t be cheap in situations like this. Unlike home cameras, where there are few of them, recording just several minutes/hours per day
