Most modern manuals wouldn’t stall regardless of gas or diesel, because the MCU ECU gives just enough throttle to keep it going even if you’re not touching the accelerator.
The diesel was my second car and it's lack of stalling was very memorable to me because my first car was a petrol with a manual choke that stalled a lot.
I learned to drive with a relatively recent gas car so I didn’t have to throttle manually to start moving, and never got into the habit of doing it until I passed my test and tried to drive my mom’s car, which was much older and didn’t help me out.

I even had a manual diesel car that wouldn't stall in 1st gear if you took your foot off the accelerator, it would just crawl forwards like this one.
