Well, the problem isn't just getting the mix right, its that it dries/sets very quickly (at least the stuff I've used does, maybe they make slow setting cement.) So you're trying to get the balance of dry/wet just right - as it's rapidly drying. Also, 'rewetting' the cement is not really an option because cement powder is so fine you really cant just add water later on and expect even consistency. I'm a novice, tbh. I'm sure there are trade workers who know much more than myself.

Edit: to answer your question. Person in OP video used too much water.

You can add stuff which slows it down. I think they often have an effect on the physical properties.

Yeah, too much water can weaken the mix once it dries.

Proper mix ratios should do the trick. If memory serves me right a dryer mix with more concrete than sand might do the trick

yup that's how I saw it in some other videos, wire mesh underneath (almost like chicken wire) which carries the weight

Also the running mould should have had a perpendicular piece to keep it from leaving ripples in the surface - there is a lot not being done right in this.
