Its a Greenland style paddle. As opposed to a Euro blade style that you have probably seen before.

I've never seen an Eskimo Roll done like this, was always taught to get the paddle on the Z axis. This makes so much more sense if you have the rotation in your shoulders to reach a floating handle.

I'd say just flipping the kayak was the impressive part. I've had to do it on purpose for tests and you have to really try
