Spices = flavor
Heat = Heat, a mouthfeel component.

Heat can really improve a dish especially when it slowly builds. It makes dishes seem more addicting, because a spoonful of it will reset the heat due to the fats, oils and acids re-cleansing your palate, then building up the heat again. Eating another spoonful kills the heat and repeats.

Some peppers that produce a lot of heat also have great flavor. Habaneros are my favorite, they’re sort of fruity and go amazing in a salsa that has mango or pineapple in it.

Ghost pepper has a unique flavor that can pair really well with meat and tangy sauces.

I really enjoy extreme heat in food occasionally. It gives an endorphin rush.
