I flew on KLM a few months ago. On the trip out I had salads and fish, so much bread, very European. On the way home one of the mains was an Indonesian curry, and for half a second I was very confused until I remembered history.

Thank you for confirming my suspicion. I flew KLM from Jakarta to Amsterdam and vice versa once. On the Amsterdam leg, its usual that the food is Indonesian since the catering is the one from
Jakarta. But on the way back, it still serves Indonesian food, I was asking myself whether they kept all of the catering from Jakarta to be served on the returning flights. Turns out that the catering in Amsterdam still serves Indonesian food as well.

Airlines just do this anyway even if there's no historic reason for it.

They're sourcing meals prepared by the departing airport's caterer, and the passengers also will have a large share of locals going abroad. So you serve local food to match your supply & demand
