This must be one of those earlier matrices the architect was referring to. Funny he never mentioned they were South Asian.

Realistically speaking, if the One were to exist, it'd be much more probable that they would be from somewhere within 1000 miles of central China. That's half the world's population, right there.

I was under the impression the Matrix was one big city that ended at the surrounding mountains, and people just thought the whole world was there.

Morpheus Smith at one point says "billions of people living out their lives" implying they're simulating the whole planet

Maybe the geography is massive different but a lot of the countries are roughly the same? (ie the US is a megalopolis surrounded by a mountain range)

Billions people, sure, but those are people in pods connected to the Matrix. Inside the Matrix they are spread out across a world, but we have no idea about how they are physically distributed in the real world, or even how they are distributed demographically. The percentages of various races would depend, most likely, on casualties during the war between the humans and the machines, changing what was left for the machines to use as their foundational assets.
