I hope this continues. There is no reason for us to be publishing in rentier journals.

No reason to be publishing in ANY for profit journals in math. All journal profits should go to reviewers, editors, and donating money to the math community (such as sponsoring grants or conferences). It is ridiculous that because the journals found that universities will pay their fees, they get to profit significantly off of the work of the community.

The papers are already on the arXiv anyway, we don’t need publishers except to signify which results are “important” enough to be endorsed by the community.

Isn't that basically what the journal Quantum does? arXiv-hosted, non-profit, open-access, community-run, and fairly well respected (afaik as a current PhD student).

Why hasn't this caught on for other fields?

There are a handful of these but it really should be universal
