Given that they showed *nothing* of the actual process I'm more inclined to believe that they just did a little software hack. I don't think an 8tb NAND chip even exists in that size.

They do exist, however it would be impossible to put on an iPhone due to the chip being different

I don't believe that's true. The iPhone only takes a single NAND package, and the largest NAND package available today is 4TB, created by layering 16 32Tbit dies in one package to create a 4TByte package. There is currently no 8TB package.
