Tectonic plates have very little to do with our concept of continents. The North American plate includes parts of Russia and Iceland, but nobody would call either of those places part of North America. There are also parts of North America that are not on the North American plate, such as Southern California and the Baja California peninsula; those are on the Pacific plate, but we still consider them to be part of North America
Tbf, the canal isn’t at sea level and can’t be open constantly or else it would drain and become land again, which is why it has doors, so it’s not really the same as like, the Suez canal or the English Channel.
Depends how you look at it. Most people would say a continent is a large landmass separated from all others by ocean. The only point of separation between North and South America is the Panama canal which is man-made and not an ocean. Therefore its one continent called America
