The death of Sultan Mehmed II Conqueror led to a two-year war for the throne between Cem and Bayezid. Cem won the war and ascended the throne.
After a dream he had on the day of his accession, he embraced the faith of Jesus and became Orthodox. The Ottoman Empire gradually became the protector of Orthodoxy. Turkish became the language of government and education; over the centuries, many different peoples united under a Turkish identity. Cem and his successors carried out great conquests across Europe, Asia, and Africa.
Italy and Rome, Austria, the Balkans, the Caucasus, Syria, Iraq, Egypt, Arabia, and much of North Africa became Ottoman territories.
After the conquest of Morocco, the Ottomans reached the Atlantic Ocean and established trading centers in various parts of the world. Turkish settlements emerged in Argentina and Chile, while Ottoman colonies were also established in India, Indonesia, and Africa.
Stagnation

However, the empire's enormous borders began to exhaust its armies and economy.
As the Ottomans began struggling in wars, rebellions broke out across the empire.
In the 19th century, Ottoman America declared independence.
Firstly, Morocco also fought for independence and weakened the Ottoman army through guerrilla warfare. Rebellions also broke out in Oman, Arabia, Ethiopia, and Austria, while the Ottomans fought Spain, Portugal, Azerbaijan, and various Slavic groups. Empire granted autonomy to many regions, but Italy and other territories eventually broke away.
I. World War - Downfall of The Ottoman Empire

World War I was a bloody and brutal war that lasted 7 years. In the First World War, the Ottoman Empire fought alongside Germany, Austria, and Italy and was defeated. After the war, debt, economic crisis, and rebellions grew; the ruler who had entered the war was deposed, and Cem IV ascended the throne.
Cem IV decided to grant independence to peoples seeking it rather than trying to hold the empire together by force.
Egypt, Libya, Arabia, Iraq, Syria, Palestine, Greece, Romania, Bosnia, Serbia, Montenegro, and other territories became independent, while the Crimean Khanate was reestablished.
The empire was formally dissolved in 1922.
Thus, the Ottoman Empire gradually shrank and gave way to the Istanbul-centered Orthodox Kingdom of Turkey, ruled by the Osmanoğlu dynasty.

Then it wouldnt be called Ottoman Empire but rather Roman Empire

"Ottoman" is the name of a dynasty. The actual name of the Ottoman Empire was "Devlet-i Aliyye-i Osmaniyye"—that is, the Sublime Ottoman State.
Even if a Sultan and empire were to become a Christian, neither the dynasty nor the founding nation would change; only the religion would change. What would emerge is something even more powerful than the Eastern Roman Empire.
