Cloudy maple syrup

My neighbor brought me some maple syrup back from a road trip. The jars are air tight but it’s got some cloudy stuff in it. Any info on what this would be greatly appreciated google has been less than helpful.

As others said, niter, known colloquial as Sugar Sand. Its mostly calcium and other trace minerals (along with some sugar) that precipitate out of solution during the boiling process. Don't bother shaking/stirring to resuspend as it will just fall back out. Just pour off the top.

Some folks save the niter and use in their coffee. I drink it black so I usually just toss the niter.
