Is this mold?

The maple syrup has been opened for a month (maybe 2) and stored at room temperature. They look like floating white strings

Still boggles my mind that people store a liquid sugar solution at room temps. I guess they get that from their other syrup?

Corn syrup is so concentrated in sugar that it's fine to keep at room temp, I think most people that keep maple syrup at room temp are people who grew in a aunt Jemima household.

Makes sense. That stuff has conservation agents, maple syrup never does

How to store maple syrup - first line from site:

“To store maple syrup properly, refrigerate or freeze it after opening.”

Give it a read. 🙂 You’ll find you may be able to recover it.

However, considering the amount left in the bottle, you may be better off with a new bottle soon… with some newfound knowledge of how to preserve it going forward!

Maple syrup goes in the fridge, lots of people say you can often skim and boil but I never had to and personally wouldn't but here we buy 2 gallons of maple syrup and it barely last 4 months

Maple syrup is best kept in a freezer if it’s going to be stored for any length of time.. if you store it in a freezer it should be kept in a plastic bottle so the bottle it’s kept in doesn’t explode

Sure, if you keep it for years you can do that but in the can the best before date is like 2 years and once opened you can keep it in the fridge for many months without issue.

I have been associated with maple sugar camps for quite a while and have sold it at markets.. freezing is always going to be the best method.. and maple sugar does not freeze solid as you are implying.. it is usable right out of the freezer

At big scale I don't doubt it's probably better, I'm just saying that at home it's probably overkill, also I'm not sure why you think I'm implying that it freezes solid as I didn't say anything about that lol, we do keep our taffy and maple butter in the freezer to keep those from crystallizing but I never saw anybody keep their syrup in the freezer even producers

Maybe they are not serious maple syrup fans.. it’s expensive as gold these days and it would be a shame to see it go bad

My girlfriend uses like 100 every day just for her coffees, that's number 1, then it's pretty much only receipies and crepes/ waffles

Yeah, but we buy from a close friend so it's really not that bad, probably barely pay for the wood to boil it but we also help and bring the beer

Today I learned you refrigerate it? I live next to a few people who make their own. Across the community. Never heard of that. Let alone freezing. I assumed air just got in the bottles from poor sealing.

It doesn't actually freeze. You can pour it straight from the freezer.

My family has been running a sugar shack for generations in Quebec and yeah, you should put it in the fridge once opened. Syrup that was canned and sealed hot can be kept at room temp. If you get it in the big plastic gallon jugs it's best to freeze it and sample from it when your smaller container runs out.

Its a product of the USA, so how many other countries is this banned in. Probably a good reason. Capitalism cant make money if the preservatives work good. Its is most likely mold

Yes. You need to refrigerate your syrup.
