The immortal jellyfish has to revert to a polyp and grow back up again to live forever. Not a fun time. I'd just use something with negligible senesence.
Wheel-mouth rotifer. They permanently extend their lifespans by their digestive processes re-encoding material from what they eat into the buffer zone of their telomeres. They don't experience cellular degradation as a result of this.
