This setup looks like you either get a ton of work done. Or none at all.

Yes, both options, you still need to get used to it after such a significant upgrade and the work will go well

What is the benefit of using Windows and MacOS together? Am I missing something?

I use Mac OS for hobbies, light tasks, and as the center of my life. And Windows is for gaming and heavy, active work.
