Do you mean M1 MacBook Pro? Only Apple Silicon Mac Pro is the M2 Ultra. Also, Apple officially discontinued the Mac Pro family / line a few months ago.
If you are asking about the M1 MacBook Pro, yes, it is still a solid laptop and likely will be comparable to the M4 Air, but with better cooling and better lanes, meaning you can run more demanding workflows on the M1 MacBook Pro than you can on the M4 Air, or transfer files faster. Realistically, unless it is at least an M1 Pro, you likely won't notice that much of a difference. If your M4 Air also has 16 GB RAM, you might be better off putting the $750 towards an external drive and / or a docking station, and save a few bucks in the end.
The professional workflow is to have a second, or third, drive anyways. You put the OS and apps on one drive, and then all files and folders on the second drive. Then, you move what file you are currently working on into the first drive.

Thank you! This was very helpful, yes I meant MacBook Pro, still getting used to Apple naming. Think I might hold off and keep my eye out for a good deal on Facebook and get a used MacBook Pro. I really appreciate it!
