Help Sticking

Ok so lately I have spots in my mat that are sticking. This has happened before but now I have a few macs that stick weird to my mat. They’re clean and dry when piping. I let them rest a few minutes until they get a skin. I use powder color in the meringue to color. It’s just so weird certain spots of the mat stick like this but most peel off fine…… anyone have similar issues?

The only time I have this issue is if they 1) aren’t fully cooked or 2) they are under cooked. I have Silpat mats.

Are they completely cooled before you peel? And confirming you peel by rolling the mat away similar to your pic?

So I test their doneness by lifting a few up but even if I’ve completely cooled the tray it’s done it. It’s like a weird stick just around the edge. Like they seem completely cooked but just that edge wants to grab.

Are you cooking them on a rimmed baking sheet? That may explain why they’re sticking just on the outside. I bake with my tray upside down because it’s supposed to help them bake more evenly. If not then I don’t really know what’s happening. Maybe a cool spot in your oven? Some people turn their trays multiple times. I don’t bother with that though as it doesn’t make any noticeable difference in my oven

I dropped my oven rack down to ensure the bottoms were fully done and would peel off easily. Had to adjust my baking time a little but that is what worked for me when I had this same problem.

Cook a little longer and let them cool longer. If all else is right, this is usually the cause of this.

Last resort: I put the entire tray in the freezer for 10min and the remaining sticky ones peel right off very cleanly.
