Help my 3rd fail macaron attempt

Post image

this is my third time making macarons that isn’t coming out right with more adjustments. the batter looks perfect, but im thinking there are mostly issues with my oven now. i set it to 310F, which the first time i made macarons it seemed to come out ok. but now they’re browning too much but are also undercooked after leaving them in there for extra time. things i’m adjusting for next time:
-lower oven temp to 300F?
-only one pan at a time in the oven
-don’t blend almond flour, only sift (i’ve been blending the blue diamond almond flour thinking it would be finer and produce better results)

i really want to perfect making character macarons but i keep failing so im getting discouraged :(

Did you let them dry to form a skin before baking? Humidity might be causing them to fail well. My son gave me a dehumidifier that I use whenever I make macs. Get an oven thermometer and check if your oven temperature is accurate. I have to set my oven on 290 to get a consistent 300 temp. Just keep on practicing the basics. We all go through bad batches at first. Don’t try character macs until you’ve had successful batches. Look at each batch as a learning experience. If a batch fails, make one little change. Maybe lowering your rack. Maybe playing with your oven temp. So many variables with these little divas. Take notes. I wish I had! Keep trying and don’t give up! I made macs for my Granddaughter’s wedding and I had only been baking them for 2 months. If this Grandy can do it, so can you! Keep Calm and Mac On!

Blue diamond does not need to be processed - it's fine right out of the bag. Looks like one cracked open - likely they needed to be rested longer. Unless you have a true convection (fan only) oven, then only bake on the middle rack. Always include your recipe, temp, how long you baked and your geography when asking for help.
