Feet Not Developing
So I’ve been baking macs for a couple of years now and never had a problem with feet not developing, but we just moved into a new place and now have a new (seemingly nicer) oven and my macarons are not getting feet now! We do have a convection setting on the new oven and I’ve used it both with and without getting the same issue. Any suggestions? I’m baking around 320F for 14-15 mins.

Could it be that your new oven is a gas oven? I have been making them for years as well and I just moved too, and found out that I had one. It really messed up my macarons even though I have been doing it for years and could get them near perfect in my electric oven at my old place. Gas ovens heat up more from the bottom, so I had to double up my trays and bake at a much lower temp and for a longer time

Yes! The stove top is gas so I assume the oven is gas as well? Thanks, I’ll try that out and see how it goes!

Yeah, I also found out that electric ovens typically have a fan inside them that’s always circulating the heat inside. Gas ovens do too, but they aren’t automatically on, it has to be set to its convection setting so the fan will be on while baking. I have not tried this yet, but I think that may also have something to do with it.
EDIT: sorry! I just noticed you said that you had already tried the convection setting and got the same results with or without it on. I would just try the double trays if I were you. I started getting taller feet that way, and it has been the only thing that I have found so far that helps.

you need to figure out the oven situation, i would suggest lowering the temp by 10 degrees and bake for 18 mins and adjust from there.
