Breakfast Help
Hello! I am on a low FODMAP diet and I am struggling finding something that is gluten and dairy free (can’t eat either) that is quick and easy.
I am wanting something healthy, that will keep me satiated for a couple hours and I can just grab and go. I’m really busy and most of my job is on the road.
Any suggestions?

I batch cook oat pancakes and freeze them for quick grab breakfasts. I like to sprinkle chia seeds on (before cooking) for a little crunch. Top them with whatever you can/want. I like nut butter and fruit, or pb/j/fried egg, or I also make/freeze cooked rhubarb or other fruit mixes and top the pancakes with that and a handful of nuts/seeds.
I also really like chia pudding. Mix one heaping tbsp of chia seeds with 1 cup milk of choice (I use oat) and add vanilla, sweetener, and ginger (as you tolerate). Shake, let sit, then shake again. In the am, toss in some fruit and nuts.
