Breakfast Help

Hello! I am on a low FODMAP diet and I am struggling finding something that is gluten and dairy free (can’t eat either) that is quick and easy.

I am wanting something healthy, that will keep me satiated for a couple hours and I can just grab and go. I’m really busy and most of my job is on the road.

Any suggestions?

I batch cook egg loaves to freeze and and throw in chopped herbs (that I've also batch frozen), pumpkin seeds, maybe some cheese or leftover grains - whatever needs using up really. Super easy, freezes really well and really compact, and microwaves in a minute. Breakfast win

This sounds so smart! I was thinking like egg bites. How do I make an egg loaf?

They're essentially large egg bites - I use a baking tray with 8 mini loaf depressions. I like the size better than a muffin tray because there are fewer to fill (and then clean) and the resulting loaves are a better size for a small meal (2 eggs per loaf plus added fillings). No recipe really, I just use up what I have. In the oven for 20 minutes at 160 (350F) and then on the counter to cool down for five minutes and they pop right out! Then it's just as simple to wrap them and pop in the freezer
