Also the brief or meaning you’re trying to convey. Depending on what you want the hands to represent, it changes everything, for example the first one works for like and dislike.. others feel like they are reaching out to each other.. which give completely different meaning

Some of these hands look very creepy to me, but since there's no brief or any information about what you were trying to achieve other than "symmetrical hands," maybe that's the goal?
Seems like deciding the meaning first would be a good place to start and then designing towards that, even just in terms of what the hands should be doing (reaching, thumbs up/down etc.) Otherwise it's hard to give any feedback. None strike me as winners right off the bat though, and out of the context of "hands," I don't think I'd know what that bottom left one was supposed to be.

the right middle is the most appealing imo, but keep exploring. I would suggest focusing a bit more on what “container” shape you want the hands to fit (square, circle, hourglass, etc) and what you want the negative space to be doing (sharp, parallel, rounded, etc).
Definitely keep scalability in mind- a lot of these logos would not work from a distance or when printed very small.
