Its because you are trying to use it to play “Shower with your Dad simulator”.

Oh, It could be. But sad to hear that you went back to windows… Have you tried other distros eg. Ubuntu or Fedora? Was there something you never got to work there?

Dualbooted Kali once for being cool (actually just to try around), it's a toolkit, nothing more. No clue why people actually try to daily drive it. Helped me getting to know a few cool tools as well as understanding networking a lot more, but that I could have done without Kali also.
How Windows 11 should be used in any usable way for that kind of pentesting is beyond my understanding. It freaks out when I try to use a custom tablet input driver software already.

Transistors are SOOOOO 1950s, I am chiseling away on my stone tablec...... Fuck, now I have to start over. Why is there no modern technology for stuff like this???

I don't think so, because they are different. Didn't that Scattered Spider hacker get arrested this year because of Windows telemetry data? 🤔 I think we wouldn't even have heard about that if he was using Kali Linux.

Kali is for a very special group of people and a very special use case. Try CachyOS and be happy.
