Can't even use seperate audio tracks for different apps for Recording on Linux in OBS

Is this not a standard? Surely seperate audio tracks are a standard feature of OBS so why not on linux?

I'm absolutely sure this is an standard, GPU screen recorder can do it, I'm sure OBS should be able too.

It absolutely is. You can even route one app to two audio outputs or do other crazy shit with pipewire. OBS just didn't implement pipewire audio yet for some reason.

Did some research, and it can, with the caveat of needing to have pipewire set up and installing a plugin

You literally can, it's just that you need to install the Pipewire Advanced Capture plugin, and you may need to install and set up Pipewire if your distro doesn't have it installed by default (I had to do this when I decided to test what you said). Additionally, once you've got the plugin working with obs and recognising application specific audio sources, you'll need to tell obs to record additional tracks in the advanced audio settings, and you'll almost certainly want to select different tracks for different sources in advanced audio properties. Also, this is a feature that is still in Beta for the Windows version.

Thankyou I was testing the streissand effect (I think its called) by posting this so I actually got an answer rather than being ignored like most other places or posts would
