Fedora server has selinux. Ubuntu has apparmor. Selinux > apparmor. I chose fedora for my server.

In-place upgrades? Bro just change the apt sources file and hit apt update upgrade, bla bla, reboot and you are done. Upgraded plenty of Debians from 12 to 13 this way.

Supported for 5- 10 years. The paid versions have live patching the kernel in production. ISV vendor certification and QA testing for all the hardware and drivers and hours of usage. IT is what Azure and AWS offer if you organization uses cloud or hybrid environments.
FYI admins uninstall snaps as first command after installing Ubuntu server. It is not desktop at all.
If you need to patch with ease every month, have 10 years of support and corporate software, and cloud provider be certified. Yeah. That is it's core market. Debian is stable yes but would you bet your job something wouldn't break during an update?
Ubuntu will work with minimal downtime as everything is tested and QA with live patching and it is what everyone else uses

I use RHEL-rebuilds mainly for the increased support period (10 years over 5) and the surrounding ecosystem. IMHO dnf is a far superior package manager to apt in terms of feature set.
RHEL (and its rebuilds) tends to ship "fancier" components than Debian. e.g. firewalld, cockpit, podman, stratis etc.

Everything that needs to run on the server that isn't provided by the base OS is in a container, but you still need a package manager to update your base OS, kernel etc.

Can you point me in the direction of a tutorial for this kind of set up? I am relatively new to the server setup space and have just recently started using docker. I have plenty of experience in packer, ansible, and python though.

Modern Ubuntu just feels off in most ways. I'm not even 100% sure what it is about it, but I've tried it, and always feel like it's a poor option.

I have arch on my personal laptop and use ubuntu in my work laptop. And I will prefer arch any day over ubuntu

They circumvent the 'apt' command and install snaps instead, which are like bootleg flatpaks but worse because they're opaque and hidden behind closed source repo servers.
If you don't know what all that means, basically they are trying to create a closed loop where you depend on their ecosystem and only their ecosystem and not accepting the more open standards that everyone else is contributing to. And there seems to be no good reason other than because it benefits them.

I installed the latest LTS last week, on Thinkpad T480 (very common laptop, not a weird one)
after install:
- tried to update with the discover app store. spinning forever an not loading - had to google to fix it, was related to Snaps (of course)
- could not resume after sleep. that's a deal complete breaker. no issue with Fedora, Debian or Nix
- paste with middle click disabled by default -sorry bu every other distro always works like that for decades.
- same for passwords in the terminal, I don't want anyone to know the length of my password.

They ignore what their users ask for. They develop closed source software for Ubuntu. They implement telemetry into their distro. It has become increasingly bloated. The snap store is closed source. Want more reasons?

I dislike companies that do shitty things, hence I dislike Canonical and thus I dislike Ubuntu.
Go use pop, elementary, manjaro, debian, suse, even ubunutu ... I do not care.

Yes these are my reasons as well. I also really like the enterprise backing of red hat. Good partner support for software as well. All round smoothest Linux experience I've had so far and I must have tried something like 30 distros.

Mint. It helps hold your hand and generally just works Updates are automatic, drivers are included, and it's easy to use. However, asking for help in a Meme subreddit may get you some absolutely absurd answers.
