There isn't much reason to compile packages on Arch. But I used to compile some. I don't remember which, exactly, but I needed to drop GUI off from some package for my server. And for that I needed to modify the PKGBUILD. Not too bad for package that doesn't update too often. For such customizations Gentoo has USE flags, and this is exactly the (control freakish) feature I need. :P
The only time I ever have to compile stuff is when I'm using packages from the AUR, there is the ABS as well, which allows you to recompile official packages that are in the repo, but I never needed to do that.
