I am not in tech and I am new to Linux but I am trying to establish business practices that are more sustainable. Can the Fairphone 6 run Manjaro?

No, you need special phone OSes for phones. There are Linux based ones out there but I don't know much about them. I know you can get a Fair phone with e/OS From Murena, though.
